computerdisc-l: Drag and Drop Menu

At many of the workshops, I have heard the newer sites talk about having dual
screen open and dragging the icons they want their students to have access to
into the student folder. My vendor does not know what I am tallking about.
Can someone give me more detailed info so I can explain exactly what I am
asking for?
Also, how do you limit your student's access to Internet?
Do you hide the control panel and the games? If so, how?
We are in the process of upgrading and I want to try to get everything
straight at the beginning, if possible.
Any other suggestions will be appreciated.
