I have use my EEF funds in the past to buy colored paper. Since the students can only print in black and white, it helps sometime to be on colored paper. This also helps when I display work. I have bought colored ink for my inkjet so I can print some of the students work in color to display. Those are my two biggest items. I try to buy things that will help my students produce better work. If I can display things they tend to want to do better.
