FOOD SCIENCE CLUB BULLY BOX PROJECT The Bully Box projects is an excellent learning experience for students in producing and selling a food products. The proceeds from this project support activities of the Food Science Club, which include sending students to both local and national meetings of the Institute of Food Technologist , recruiting students for the Department of Food Science, and sponsoring programs of interest. RED AND WHITE MUSCADINE JELLY
The Muscadine, or Vitis rotundifolia, is is probably the least developed and most underutilized of the native North American grapes. It grows wild from southern Delaware west along the Gulf Coast to southern Missouri, Kansas, Texas and into Mexico. On river banks swamps, and woodlands the wild vines often climb 75 to 100 feet over bushes and into trees. Individual berries range in color from silver-white to blue dark so it appears black, with all variations in-between. Jellies made from the juice of the muscadine grapes are extraordinary aromatic and pleasing to the taste. The Food Science Club members at Mississippi State University have prepared this jelly from cultivars of muscadine grapes, sometimes referred to as Southern Grape, Bullace, Bullit, or the Bull Grape.
